Sweet Potato Hash w/ Chorizo and Crumbled Feta

I love sweet potatoes. I could eat them every day. For me, nothing compares to sweet potato oven fries tossed with salt, pepper, onion powder, and a little paprika. This skillet is as close a second as could exist. Soft, tender sweet potatoes, crispy yellow pepper, spicy chorizo, creamy, tangy feta cheese, and crisp fresh cilantro. What is not to love? 

This dish is perfect all by itself but would be fabulous alongside eggs and toast or a light salad. It's great for breakfast, brunch, lunch or dinner. 

I used soy chorizo from Trader Joe's to keep this meal meat free, but there is no reason you can't substitute pork chorizo if you are so inclined.

Sweet Potato Hash with Chorizo and Crumbled Feta
by New to the Table
Yield: 2-4 servings
Time: 30 minutes total

Ingredients
  • 1 lb sweet potato, scrubbed and diced
  • 1 small onion, diced
  • 1 clove garlic, minced, optional
  • 2 tbsp olive oil
  • salt and pepper
  • 1 yellow bell pepper, seeded and diced
  • 6 oz. soy chorizo
  • 2-3oz. crumbled feta
  • handful fresh cilantro, chopped

Heat oil in a skillet over medium-high heat. 

Add onion and garlic, season with salt and pepper, and cook, stirring frequently, until soft.


Add chorizo and cook until it begins to firm, then add the sweet potato. Toss ingredients in pan to combine, cover, and reduce the heat. Stir every few minutes to keep from burning. 

When the potatoes become tender, add the bell pepper and toss to combine. Cook another 1-2 minutes.

Remove from heat, top with crumbled feta and fresh cilantro. Serve immediately.
